Preparing the Drink

Fill a cocktail shaker or large mason jar halfway with ice. Pour in 1/2 cup chilled Summer-Berry Refresher Base and 1/2 cup sweetened coconut milk. Shake well for about 15 seconds until nicely mixed and frothy.

Spoon 1/4 cup raspberry pearls with their liquid into the bottom of your serving glass. Pour the shaken mixture over the pearls, including the ice, and serve immediately.

Making the Refresher Base

In a large jar with a lid, combine 1/2 cup + 2 Tbsp berry syrup, 1 1/3 cups cold water, 1/2 teaspoon citric acid, 1/2 teaspoon green coffee extract powder if using, and 1/4 teaspoon blue spirulina powder. Shake vigorously until fully combined.

Crafting the Berry Syrup

In a medium saucepan, combine 1 cup water and 1 cup sugar. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer for 10 minutes. Remove from heat and stir in 1/2 teaspoon each of blueberry, raspberry, and blackberry extracts. Let cool completely before using.

  • Chill everything first: Cold ingredients keep the drink frosty longer without getting watered down.
  • Taste as you go: Add more syrup if you want it sweeter, or less if you prefer it tart.
  • Use fresh berries if you like: A few muddled raspberries add extra flavor.
  • Shake well: Vigorous shaking gives the drink its blended flavor and frothy finish.

Frequently Asked Questions

Can I skip the blue spirulina powder?
Yes. It mainly gives the drink its sky-blue color, but the flavor will still be delicious without it.

How long does the berry syrup last in the fridge?
The syrup keeps well for about 2 weeks in a sealed jar in the refrigerator.

Can I use fresh berries instead of extracts?
Yes. Muddled fresh raspberries or blackberries work well, though the flavor may be a little lighter and less concentrated.
